Christmas Cookies

Earlier this month, I mentioned that I was going Christmas tree hunting with my family and a few friends. Our tradition is to always to take some fresh baked goodies along with us to enjoy after we find our trees and cut them down. After mentioning I was looking for the perfect cookie recipe, I had some kind people share their favorites with me. I've asked permission so I can share them with you.

This recipe comes from Jennifer Morehouse. If you've been a long time listener, you might remember her as an announcer from several years back. (about 5 years) She was a student intern at Positive Life Radio, and now lives in Connecticut with her husband. Jennifer now listens online, and sent me an email with this cookie/bar recipe that she says her entire family enjoys. Here are her instructions:

1 package of graham crackers

1 stick of butter

12 oz bag of chocolate chips

12 oz bag of either peanut butter or butterscotch chips (butterscotch is my favorite!)

2 cups chopped walnuts

1 package of sweetened shredded coconut

1 small can sweetened condensed milk

-Crush one pack of graham crackers into fine crumbs. Using a rolling pin or throwing them in the blender works best for me.

-Melt the stick of butter and pour over the graham cracker crumbs. Mold it all into a thin crust at the bottom of a well-greased  9"x13" baking dish.

-Take the chocolate chips, sprinkle evenly over graham cracker crust as densely as you like. Do the same with the other bag of chips.

-Sprinkle coconut over the chips.

-Sprinkle chopped nuts over the coconut.

-Drizzle the sweetened condensed milk over the top to hold it all together, especially the edges and corners.

Pop it all in the oven at 350 for about 20 minutes, or until the coconut starts to brown. You'll want to make sure it gets a little toasted on top and the chips all melt together.

Let it sit until it cools down to "just warm", that way you can cut it into bars and pry it away from the edges before it solidifies, but it'll stay cut and not just melt back together. It's really more candy than cookie, but it works.
